On a warm summer day, Maria and her daughter Sofia took a trip across the fields near their tiny town. As they were walking, Maria spotted a small tree. She looked more closely and saw that the tree produced tiny, white fruits, which she had never seen before.
The fruits initially seemed like animal or bird eggs, but upon closer investigation, Maria realized they were eggplants. Sofia begged her mom to bring some of the strange, white fruits home so she could cook them.
Maria was at first reluctant because she had never cooked with white eggplants before and wasn’t sure what to do with them. Sofia urged Maria to try it, so she did. She grabbed a few eggplants off the tree and brought them inside.
After they got home, Maria immediately started working in the kitchen. She searched up recipes online to ensure the eggplants were cooked to perfection. She eventually prepared the typical Italian dish she had always loved: eggplant parmesan.
After being thinly sliced and deep-fried until golden brown, the eggplants were topped in tomato sauce and mozzarella cheese and baked until hot and bubbling. When everything was done, she and Sofia sat down to taste their handiwork.
Maria was pleasantly surprised by how great the eggplant parmesan tasted. The soft, sweet, and subtly flavored eggplants paired well with the acidic tomato sauce and oozy cheese.
After that, Maria made it a point to return to the property each summer to see how the white eggplant tree was doing. Every summer, it would produce its strange yet wonderful fruit. She would take a few of the eggplants off the tree and bring them inside since they had created a family recipe for eggplant parmesan.
For Maria and Sofia, the discovery of the white eggplant tree opened up a whole new world of culinary possibilities. It also reminded Maria that sometimes the most wonderful things may be found in the most unexpected places.
